Elegant Steak
This recipe is one of my husband's specialties and now one of my favorites. It helps that he always cooks it while I enjoy a glass of red wine.
Prep Time: 15-20 min
Cook Time: 1 hr 30 min
Level: Medium
Serves: 4-6
What you'll need
1 1/2 lbs thin round steak
1 1/2 T vegetable oil
2 large onions (cut in rings)
1 can sliced mushrooms, drained but save liquid
2 cans cream of mushroom soup
1/2 cup dry or cooking sherry
1 1/2 tsp garlic salt
1/2 T pepper
Directions:
Cut steak in thin strips. Brown meat in oil with pepper.
Add onions & saute until tender crisp.
Add mushroom soup, cooking Sherry, liquid from mushrooms & garlic salt.
Pour over steak, add mushrooms.
Reduce heat, cover & simmer for 1 hour or until steak is tender.
*Optional: Serve over rice - start rice after meat has simmered for about 30 minutes.

Blue Cheese and Bacon Mashed Potatoes Au Gratin
A delicious blue cheese and bacon potato dish with a crunch on top from Paula Deen with Smithfield.
Cook Time:40 min
Serves:6 servings
What you'll need
Custard:
1/2 cup Smithfield Bacon, cooked and crumbled
7 medium-sized potatoes (slightly over 2 lbs), peeled and quartered
6 tablespoons unsalted butter
Salt and freshly ground black pepper, to taste
1/2 cup heavy cream
4 oz. blue cheese, crumbled
1/4 cup fine bread crumbs
Directions:
Preheat the oven to 400 degrees F.
Cook the potatoes in boiling water until tender.
Drain and dry over heat in the pan.
With potato masher, mash the potatoes and add the butter, salt and pepper. Blend well.
Gradually blend in the cream until you have the desired consistency. The mixture should not be too thin.
Fold in the blue cheese and bacon.
Spoon the potato mixture into a shallow prepared baking dish.
Sprinkle evenly bread crumbs.
Bake until heated through and golden on top. Or, if the potatoes are still very hot, place under broiler until golden brown.
